  • Two 9-inch cake pans

Ingredients

  • 4 cups plus 2 tablespoons non self-rising cake flour
  • 2 teaspoons of baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon table salt
  • 2 sticks of softened, unsalted butter
  • 2 cups sugar
  • 2 teaspoons pure vanilla extract
  • 4 large room temperature eggs
  • 2 cups shaken buttermilk

  1. Preheat your oven to 350°F. Butter the two 9-inch round cake pans and line with circles of parchment paper. Follow this by buttering the actual parchment.
  1. Sift together your flour, baking powder, baking soda, and salt into a medium bowl.
  1. In a large mixing bowl, beat butter and sugar in a large bowl with an electric mixer at medium speed until pale and fluffy. Follow this by beating in the vanilla.

  1. Cool in pan on a rack 10 minutes, then run a knife around edge of pan. Invert onto rack and discard parchment, then cool completely, about 1 hour.

The two cake portions can now be stacked on each other, using a layer of icing in between to keep them together. Now that your cake is made, it’s time to make the icing.

2.Pour in milk and beat for an additional 3-4 minutes. Gradually add food coloring and beat for thirty seconds until smooth or until desired color is reached.

  • Electric Mixer
  • Mixing Bowl
  • Spare bowl for excess icing

Ingredients

  • large egg white
  • 1 1/2 cups (6 ounces, 175 grams) powdered sugar
  • 1/2 lemon, juiced and strained

Directions

1. Combine the egg whites and powdered sugar in a medium-size mixing bowl and whip with an electric mixer on medium speed for about five minutes, or until opaque and shiny.

2.Add the lemon juice and continue whipping until completely incorporated, about 3 minutes.

3.The lemon juice will then whiten the royal icing. At this point, your royal icing should be light, fluffy, and slightly stiff. You can elect to adjust the consistency by adding more egg whites if the icing is too dry, or more powdered sugar if it is too wet.

4.Measure out half of your icing and set aside. Be sure to cover the remaining icing with a damp cloth to keep it from drying out while you work.

The first step you need to take is to actually put your cake in the refrigerator and wait around 15 minutes until it is cooled down.
