Birthday Cake Recipe

A simple vanilla cake provides a neutral setting for which to base your birthday cake decorations on. There are some certain people out there who aren’t fond of chocolate cake, so a vanilla cake recipe seems like a good choice. This cake also gives you the option of using chocolate icing if you so desire.

Serving Size: Two 9-inch round, 2-inch tall cake layers.

What You’ll Need

  • Two 9-inch cake pans
  • Large Mixing Bowl
  • Spatula
  • Mixer or Hand Mixer
  • Parchment paper

  • 4 cups plus 2 tablespoons non self-rising cake flour
  • 2 teaspoons of baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon table salt
  • 2 sticks of softened, unsalted butter
  • 2 cups sugar
  • 2 teaspoons pure vanilla extract
  • 4 large room temperature eggs
  • 2 cups shaken buttermilk

Flower Icing on Cake

  1. Preheat your oven to 350°F. Butter the two 9-inch round cake pans and line with circles of parchment paper. Follow this by buttering the actual parchment.
  1. Sift together your flour, baking powder, baking soda, and salt into a medium bowl.
  1. In a large mixing bowl, beat butter and sugar in a large bowl with an electric mixer at medium speed until pale and fluffy. Follow this by beating in the vanilla.
  1. Add each egg one at a time while beating well and scraping down the bowl after each addition.
  1. Beat in the buttermilk at a lower speed until just combined.
  1. Add flour mixture in three batches, mixing until each addition is barely incorporated.
  1. Spread batter evenly in cake pan, then rap pan on counter several times to eliminate air bubbles.
  1. Bake until golden and a wooden pick inserted in center of cake comes out clean, (around 35 to 40 minutes.)
  1. Cool in pan on a rack 10 minutes, then run a knife around edge of pan. Invert onto rack and discard parchment, then cool completely, about 1 hour.

The two cake portions can now be stacked on each other, using a layer of icing in between to keep them together. Now that your cake is made, it’s time to make the icing.

Icing Recipe for Piping

Russian piping tips offer an easy and convenient way to give your cake beautiful and detailed designs and decorations by merely squeezing a bag filled with icing through the tips.

Not just any icing will do, however. Icing for piping use needs to be pliable and smooth, allowing it to easily be squeezed through the tips without getting blocked.

It may be tempting to purchase icing at the store, but this will yield poor results. Icings you find at the store are not the right consistency or texture for piping, so it’s always best to avoid them. Homemade buttercream icing is one the most ideal ones you can use. Here’s an easy recipe.

What You’ll Need

  • Electric Mixer
  • Mixing Bowl
  • Spare bowl for excess icing
  • Cloth

  • large egg white
  • 1 1/2 cups (6 ounces, 175 grams) powdered sugar
  • 1/2 lemon, juiced and strained

1. Combine the egg whites and powdered sugar in a medium-size mixing bowl and whip with an electric mixer on medium speed for about five minutes, or until opaque and shiny.

2.Add the lemon juice and continue whipping until completely incorporated, about 3 minutes.

3.The lemon juice will then whiten the royal icing. At this point, your royal icing should be light, fluffy, and slightly stiff. You can elect to adjust the consistency by adding more egg whites if the icing is too dry, or more powdered sugar if it is too wet.

4.Measure out half of your icing and set aside. Be sure to cover the remaining icing with a damp cloth to keep it from drying out while you work.

Now you’re all set to decorate.

Preparing Your Cake for Decoration

So now that you have all of your icing and cake ready, it’s time to get down to business. The first step you need to take is to actually put your cake in the refrigerator and wait around 15 minutes until it is cooled down. This allows the cake to hold its shape better, making the decorating process much easier.

The next step is to cover the cake in your base icing. A rotating cake stand or lazy susan is highly recommended for smoother edges.

  • Smooth a base layer of icing onto the cake by using a spatula to seal off any crumbs. Place the cake back into the refrigerator and allow to chill for at least 15 minutes.
  • When cooled, coat the sides of the cake with more icing. Using your stand or lazy susan, rotate the cake in a circle while holding the spatula against the sides. Do this until you’ve gone all the way around.
  • Carefully spoon any remaining icing onto the top of the cake, and perform the same rotating smoothing method to the top until all the icing is worked in. Chill the cake for another 15 minutes before continuing on to the actual decorating.

Cake Decorating

At this point, you have free reign as far as how you’d like to decorate your birthday cake. If you would like to have a specific design, sketch out your design using dots made by poking a small toothpick into the surface of the icing first.

Using your icing bag and piping tips, Carefully squeeze to make various designs such as flowers, spirals, dots, or whatever else you’d like. Pre-mixing your colors before is recommended so that you can continue with each design with as little interruption as possible.

If you’d like to write someone’s name or birthday message, be sure to leave yourself some space. A fine-tipped piping tip is recommended for writing with.

Not everyone will be comfortable creating different designs all over the cake. If this sounds like you, consider doing textures instead. Use your piping tips to create consistent peaks, lines, or any other kind of texture you can come up with. It may be a little more tedious, but the results will speak for themselves.
